Can I use Connector for Outlook without the Calendar functionality?

No, this is not how the product is intended for use. However, if you did choose to do so, there will be a pop-up "everytime" users log in to Outlook, indicating that login to Calendar Server failed. If users click Ok then they can go ahead and use Outlook without calendar.

Note that the chief advantage of using Connector for Outlook is the calendar integration with Calendar Server. One can get mail functionality in Outlook using Microsoft IMAP.
